24 hours late

I had made an apple batch of kefir three days ago, and was a little nervous today as I strained the water because I was a day late in changing it.  Because I am new to the whole kefir growing thing, I had no idea what to expect.

The taste was a lot less sweet than my normal batches, but it almost tasted like an apple beer.  Not bad at all, however I did add a bit of ginger afterwards.

The more I have been reading, the more I have found that people make their kefir in many different ways.  Some don't add the fruit flavorings until after the water is brewed and strained, and some add it during the brewing process.  Some rinse their grains and some don't.

If anyone could enlighten me on these things, that would be great!
